Microwave Blueberry Ginger Oatmeal

  • This is a healthier, tastier alternative to the instant oatmeal packets sold at the supermarket. Make several batches ahead of time to store in single-serving containers for quick weekday breakfasts.

Feel free to tinker with this one. Substitute other dried fruits, add toasted nuts, or try cinnamon in place of ginger.

Ingredients

  • 1/3 cup old-fashioned whole oats
  • 1 tablespoon dried blueberries
  • 2 teaspoons packed brown sugar
  • Pinch salt
  • Dash ground ginger
  • 2/3 cup water

Preparation

  • Put the oats, dried blueberries, brown sugar, salt and ginger in a deep, microwave-safe cereal bowl. Add water and stir.

  • Microwave on high for 2 to 3 minutes, until the oats absorb the liquid and appear soft. Remove from the microwave using an oven mitt. Stir and cool for 1 minute.

  • Enjoy as is or with a splash of cold milk.
