Glazed Lemon Ginger Tea Cookies

Ingredients

  • For the cookies:
  • 2 cups unsalted butter at room temperature
  • 1 1/3 cups powdered sugar
  • 1 tsp grated lemon zest
  • 1 Tbs lemon juice
  • 1/2 tsp vanilla extract
  • 4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4-1/2 cup finely chopped candied ginger
  • Ingredients for Icing:
  • 1/4 cup lemon juice or water
  • 2 cups powered sugar

Directions

  • In a large bowl, beat butter until creamy.

  • Add sugar; mix until light and fluffy.

  • Add lemon zest, lemon juice and vanilla until well mixed.

  • Mix in flour and salt until combined.

  • Stir in the candied ginger bits.

  • Roll dough into log, wrap in plastic and refrigerate for 1 to 2 hours.

  • Pre-heat oven to 350 degrees.

  • Take dough out of fridge and form into 1/4" rounds.

  • On an ungreased baking sheet, arrange the cookies so they don't touch.

  • Bake for 16-20 minutes; allow to cool on baking rack.

  • While cookies are baking, mix icing ingredients together. If the icing is too thick, add a small amount of water to attain desired consistency.

  • Dip cookies in icing; let set.
