Turkey, Cheese & Salsa Pinwheels

  • Putting pinwheels on a skewer will not only add a bit of fun to a lunchbox but it will also help hold the spirals together. There are endless variations for pinwheels, and they are a great opportunity to pack a nutritional punch with lettuce, tomatoes, avocado, and shredded carrots.

When you are making pinwheels use plenty of 'glue' to keep the spirals tight, avoiding a mess. Some of my favorite 'glue' secrets are: avocado mash, flavored cream cheese, aioli, and hummus.

Ingredients

  • Turkey
  • Flour tortilla
  • Monterey jack cheese
  • Salsa
  • Avocado

Preparation

  • Preheat oven to 350 degrees.

  • Place a flour tortilla on a baking sheet, and sprinkle shredded Monterey jack cheese over the top. Bake until the cheese melts, about 5 minutes. Arrange turkey slices over the cheese, and then top with a few spoonfuls of salsa and/or mashed avocado. Roll up the tortilla into a tight cylinder. Trim the ends, and then cut the cylinder crosswise into slices.

  • To help them hold their shape, thread pinwheels on skewers or toothpicks. Snip off the toothpick tips.
